Halibut Piccata
When my wife and I first met, I thought what better way to try and impress her with my cooking skills. I guess it worked! This is my go to recipe. I have yet to meet someone who doesn’t like anything piccata! Trust me, it doesn’t get much better than this!

  1. Heat a large non-stick skillet over medium heat. Add oil and ½ of butter.
  2. Season both sides of the halibut with salt and pepper and light dust each side with flour.
  3. When skillet is at a medium heat, place halibut in skillet and allow to cook for 4 minutes on each side. Remove fish from skillet and place on a wire rack.
  4. With the skillet still on the eye, turn heat up to Medium high, add ¼ cup wine, remaining amount of butter, capers, ½ lemon squeezed, and season with salt and pepper to taste.
  5. Scrap brown bits from bottom of pan. Reduce sauce until half the liquid is gone and the wine has cooked down.
  6. Drizzle the pan sauce over the fish before serving.
