Sockeye Salmon Stir Fry
We love all types of stir fry! What better way to enjoy a piece of wild caught salmon than with a quick stir fry. You can use any vegetable you have in your refrigerator, but here is my favorite way to do it!

  1. Heat a large skillet or Wok over high heat.
  2. Add oil.
  3. Once hot add onion and carrot.
  4. When onion has softened add mushrooms, squash and snap peas. Cook 1 minute.
  5. Add salmon. Cook 1 minute.
  6. Add rice, vinegar, soy sauce and red pepper flake.
  7. Allow bottom side to brown. Toss and allow to brown again.
  8. Remove from heat, and serve in bowls. Garnish with black sesame seeds
  9. Top with a sunny side up fried egg for some extra protein!
