Blackened Sockeye Salmon Tacos

Ingredients

  • 4 6-ounce fillets MSC Sockeye salmon (skin removed and cubed)
  • 1-2 tbsp blackening seasoning (Example: Old Bay)
  • 1 tbsp Avocado Oil
  • 12 Flour tortillas or bibb lettuce leaves
  • 1/2 cup White Onion (diced)
  • 1/2 cup Cilantro (chopped)
  • 2 Limes (cut into wedges)

Instructions

  1. Heat oil over high heat.
  2. Skin and cube portions of sockeye salmon. Sprinkle with blackening seasoning (the more seasoning added, the spicier it will be).
  3. When skillet is very hot, add seasoned salmon. Quickly flip and cook in batches to avoid overcrowding the skillet.
  4. For a medium/medium rare finish, cook for 1-2 minutes. Remove from heat to a paper towel-lined plate.
  5. Assemble by adding blackened salmon to tortilla or lettuce leaf.
  6. Garnish with chopped onion, cilantro, and a squeeze of lime! Enjoy with a cold beer!
