Blackened Sockeye Salmon Tacos

Ingredients
- 4 6-ounce fillets MSC Sockeye salmon (skin removed and cubed)
- 1-2 tbsp blackening seasoning (Example: Old Bay)
- 1 tbsp Avocado Oil
- 12 Flour tortillas or bibb lettuce leaves
- 1/2 cup White Onion (diced)
- 1/2 cup Cilantro (chopped)
- 2 Limes (cut into wedges)
Instructions
- Heat oil over high heat.
- Skin and cube portions of sockeye salmon. Sprinkle with blackening seasoning (the more seasoning added, the spicier it will be).
- When skillet is very hot, add seasoned salmon. Quickly flip and cook in batches to avoid overcrowding the skillet.
- For a medium/medium rare finish, cook for 1-2 minutes. Remove from heat to a paper towel-lined plate.
- Assemble by adding blackened salmon to tortilla or lettuce leaf.
- Garnish with chopped onion, cilantro, and a squeeze of lime! Enjoy with a cold beer!
