Sockeye Salmon Poke Bowl

Ingredients

  • 2-3 6-ounce Sockeye salmon fillets, skin removed and chopped into ½ inch cubes
  • 1 cucumber, sliced thin
  • 1 carrot, julienned
  • 1 cup edamame
  • 1/2 jalapeno, sliced
  • 2 green onions, chopped
  • 1/2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sriracha
  • 1 tbsp black sesame seeds

Instructions

  1. Prepare and cut all of the vegetables as described.
  2. Mix soy sauce, sesame oil, sriracha, and half of the green onion in a bowl.
  3. Marinate the prepared salmon in the mixture for 1 minute.
  4. Divide the rice and all ingredients evenly between 4 bowls.
  5. Garnish with black sesame seeds.
