Sockeye Salmon Poke Bowl

Ingredients
- 2-3 6-ounce Sockeye salmon fillets, skin removed and chopped into ½ inch cubes
- 1 cucumber, sliced thin
- 1 carrot, julienned
- 1 cup edamame
- 1/2 jalapeno, sliced
- 2 green onions, chopped
- 1/2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sriracha
- 1 tbsp black sesame seeds
Instructions
- Prepare and cut all of the vegetables as described.
- Mix soy sauce, sesame oil, sriracha, and half of the green onion in a bowl.
- Marinate the prepared salmon in the mixture for 1 minute.
- Divide the rice and all ingredients evenly between 4 bowls.
- Garnish with black sesame seeds.
