Wild Sockeye Salmon Chowder

Ingredients
- 2 6-ounce MSC Sockeye Fillets, skin removed and cubed into bite-size pieces
- 2 cups Chicken broth
- 1/2 cup White onion, chopped
- 1/2 cup Celery, chopped
- 1/2 cup Carrot, peeled and chopped
- 1/2 cup Red bell pepper, chopped
- 1 cup Potato (red or russet), peeled and cubed
- 1/2 cup Frozen corn
- 1/2 cup Milk or ⅓ cup cream
- 1 tbsp Dried dill
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- Sauté carrots, onion, celery, red bell pepper, and carrots until onions are translucent. Season with salt and pepper.
- Add chicken broth and potatoes and bring to a low boil for 15-20 minutes.
- Add corn, bring back to a simmer.
- Mix together dill, garlic powder, salt, and pepper.
- Toss salmon in combined seasoning mix.
- Add salmon to soup and allow to simmer for 3-4 minutes.
- Turn off heat and add milk or cream (optional).
- Garnish with fresh dill and serve with French bread.
