Wild Sockeye Salmon Chowder

Ingredients

  • 2 6-ounce MSC Sockeye Fillets, skin removed and cubed into bite-size pieces
  • 2 cups Chicken broth
  • 1/2 cup White onion, chopped
  • 1/2 cup Celery, chopped
  • 1/2 cup Carrot, peeled and chopped
  • 1/2 cup Red bell pepper, chopped
  • 1 cup Potato (red or russet), peeled and cubed
  • 1/2 cup Frozen corn
  • 1/2 cup Milk or ⅓ cup cream
  • 1 tbsp Dried dill
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. Sauté carrots, onion, celery, red bell pepper, and carrots until onions are translucent. Season with salt and pepper.
  2. Add chicken broth and potatoes and bring to a low boil for 15-20 minutes.
  3. Add corn, bring back to a simmer.
  4. Mix together dill, garlic powder, salt, and pepper.
  5. Toss salmon in combined seasoning mix.
  6. Add salmon to soup and allow to simmer for 3-4 minutes.
  7. Turn off heat and add milk or cream (optional).
  8. Garnish with fresh dill and serve with French bread.
