Pan Fried Haddock with Italian Bread Crumbs

Ingredients:

  • 4 haddock fillets (8 oz each)
  • 1 cup Italian seasoned bread crumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup avocado oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions:

  1. Pat haddock fillets dry and season with salt and pepper.
  2. Set up three shallow dishes: flour in one, beaten eggs in another, and Italian bread crumbs in the third.
  3. Dredge each fillet in flour, then egg, then bread crumbs, pressing gently to adhere.
  4. Heat avocado oil in a large skillet over medium-high heat.
  5. Cook haddock fillets for 3-4 minutes per side until golden brown and fish flakes easily.
  6. Drizzle with lemon juice and garnish with fresh parsley.
  7. Serve immediately with lemon wedges.
