Pan Fried Haddock with Italian Bread Crumbs

Ingredients:
- 4 haddock fillets (8 oz each)
- 1 cup Italian seasoned bread crumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup avocado oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions:
- Pat haddock fillets dry and season with salt and pepper.
- Set up three shallow dishes: flour in one, beaten eggs in another, and Italian bread crumbs in the third.
- Dredge each fillet in flour, then egg, then bread crumbs, pressing gently to adhere.
- Heat avocado oil in a large skillet over medium-high heat.
- Cook haddock fillets for 3-4 minutes per side until golden brown and fish flakes easily.
- Drizzle with lemon juice and garnish with fresh parsley.
- Serve immediately with lemon wedges.
