Shrimp Arrabbiata

Ingredients

  • 1 box linguine
  • 2 tablespoons olive oil, divided
  • 1 pound Marithyme Gulf shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 1/2 cup chopped white onion
  • 2 teaspoons dried basil
  • 1/2 teaspoon crushed red pepper (add more for extra heat)
  • 2 tablespoons Italian tomato paste
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook pasta according to package directions. Drain and keep warm.
  2. Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat.
  3. Season shrimp with salt and add to pan.
  4. Cook for 2 minutes per side, then transfer to a bowl.
  5. Heat remaining 1 tablespoon olive oil in the same pan.
  6. Add onion, garlic, basil, and crushed red pepper. Sauté for 1 minute.
  7. Add tomato paste and diced tomatoes, then bring to a boil.
  8. Cook for 3 minutes or until the sauce begins to thicken.
  9. Add shrimp back to the pan and cook for 1 minute.
  10. Add parsley to the pan and stir well to combine.
  11. Serve over pasta.
