Ingredients
- 1 box linguine
- 2 tablespoons olive oil, divided
- 1 pound Marithyme Gulf shrimp, peeled and deveined
- 1/4 teaspoon salt
- 1/2 cup chopped white onion
- 2 teaspoons dried basil
- 1/2 teaspoon crushed red pepper (add more for extra heat)
- 2 tablespoons Italian tomato paste
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook pasta according to package directions. Drain and keep warm.
- Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat.
- Season shrimp with salt and add to pan.
- Cook for 2 minutes per side, then transfer to a bowl.
- Heat remaining 1 tablespoon olive oil in the same pan.
- Add onion, garlic, basil, and crushed red pepper. Sauté for 1 minute.
- Add tomato paste and diced tomatoes, then bring to a boil.
- Cook for 3 minutes or until the sauce begins to thicken.
- Add shrimp back to the pan and cook for 1 minute.
- Add parsley to the pan and stir well to combine.
- Serve over pasta.
