Sockeye Salmon Stir Fry

Ingredients
- 3 6-ounce MSC Sockeye Salmon fillets
- 1 cup Wild brown rice (cooked, preferably left over)
- 2 tbsp Sesame Oil (or any high smoking point cooking oil)
- 1/2 cup White Onion (chopped)
- 1/2 cup Carrot (chopped)
- 1 cup Zucchini (chopped)
- 1 cup Sugar Snap Peas
- 1/2 cup Shiitake Mushrooms (sliced)
- 1 tbsp Rice Wine Vinegar
- 1 tbsp Soy Sauce
- 1 tsp Red Pepper Flake (omit if you are not a fan of a little heat!)
Instructions
- Heat a large skillet or Wok over high heat.
- Add oil. Once hot, add onion and carrot.
- When the onion has softened, add mushrooms, zucchini, and snap peas. Cook for 1 minute.
- Add salmon. Cook for 1 minute.
- Add rice, vinegar, soy sauce, and red pepper flake.
- Allow the bottom side to brown. Toss and allow to brown again.
- Remove from heat and serve in bowls. Garnish with black sesame seeds.
- Top with a sunny side up fried egg for extra protein!
