Halibut Piccata

Ingredients

  • 4 6-ounce MSC Halibut Fillets
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp All Purpose flour
  • 2 tbsp Avocado Oil or any high smoking point cooking oil
  • 2 tbsp Butter
  • 1/4 cup White Wine
  • 1 tbsp Nonpareilles capers, drained
  • 1 quartered Lemon

Instructions

  1. Heat a large non-stick skillet over medium heat. Add oil and ½ of the butter.
  2. Season both sides of the halibut with salt and pepper and lightly dust each side with flour.
  3. When the skillet is at medium heat, place halibut in the skillet and allow it to cook for 4 minutes on each side. Remove fish from the skillet and place on a wire rack.
  4. With the skillet still on the heat, turn the heat up to medium-high, add ¼ cup wine, the remaining butter, capers, ½ lemon squeezed, and season with salt and pepper to taste.
  5. Scrape the brown bits from the bottom of the pan. Reduce the sauce until half the liquid is gone and the wine has cooked down.
  6. Drizzle the pan sauce over the fish before serving.
