Halibut Piccata

Ingredients
- 4 6-ounce MSC Halibut Fillets
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp All Purpose flour
- 2 tbsp Avocado Oil or any high smoking point cooking oil
- 2 tbsp Butter
- 1/4 cup White Wine
- 1 tbsp Nonpareilles capers, drained
- 1 quartered Lemon
Instructions
- Heat a large non-stick skillet over medium heat. Add oil and ½ of the butter.
- Season both sides of the halibut with salt and pepper and lightly dust each side with flour.
- When the skillet is at medium heat, place halibut in the skillet and allow it to cook for 4 minutes on each side. Remove fish from the skillet and place on a wire rack.
- With the skillet still on the heat, turn the heat up to medium-high, add ¼ cup wine, the remaining butter, capers, ½ lemon squeezed, and season with salt and pepper to taste.
- Scrape the brown bits from the bottom of the pan. Reduce the sauce until half the liquid is gone and the wine has cooked down.
- Drizzle the pan sauce over the fish before serving.
