Seared Sea Scallops

Makes: 4 servings


Ingredients

  • 1 Pound Sea Scallops, thaw and pat dry
  • 2 Tbsp vegetable oil or any high smoking point oil (sesame or avocado oil)
  • 1 Tbsp Butter
  • 2 Tbsp Salt
  • 2 cups prepared Pearl Couscous
  • 1/2 cup cooked shelled spring peas
  • 2 Tbsp small mint leaves

Directions

  1. Thaw scallops and pat dry*, sprinkle with salt on both sides, and let rest for 10 minutes.
  2. Prepare pearl couscous per package instructions.
  3. Add cooked spring peas to cooked couscous and set aside.
  4. Heat oil and 1 Tablespoon of butter over medium-high heat until smoking.
  5. Sear scallops for 1 minute, flip and sear 1 more minute, then remove from heat. Let rest for at least 5 minutes.
  6. Plate couscous with 4-5 scallops and garnish with mint.

*Scallops must be patted completely dry in order to get a good sear. DO NOT SKIP THIS STEP.
