Seared Sea Scallops
Makes: 4 servings
Ingredients
- 1 Pound Sea Scallops, thaw and pat dry
- 2 Tbsp vegetable oil or any high smoking point oil (sesame or avocado oil)
- 1 Tbsp Butter
- 2 Tbsp Salt
- 2 cups prepared Pearl Couscous
- 1/2 cup cooked shelled spring peas
- 2 Tbsp small mint leaves
Directions
- Thaw scallops and pat dry*, sprinkle with salt on both sides, and let rest for 10 minutes.
- Prepare pearl couscous per package instructions.
- Add cooked spring peas to cooked couscous and set aside.
- Heat oil and 1 Tablespoon of butter over medium-high heat until smoking.
- Sear scallops for 1 minute, flip and sear 1 more minute, then remove from heat. Let rest for at least 5 minutes.
- Plate couscous with 4-5 scallops and garnish with mint.
*Scallops must be patted completely dry in order to get a good sear. DO NOT SKIP THIS STEP.
